Chicken Meatballs

  • 1.5 lb ground Red Bird Chicken

  • ¼ tsp. thyme

  • ¼ tsp. oregano

  • ¼ tsp. rosemary

  • ¼.tsp. marjoram

  • ¼. tsp. sage

  • ½. tsp. salt

  • 1 medium onion

  • 2 garlic cloves

  • 2 tbsp. olive oil

  • 1 egg

  • 1 ½ cup bread crumbs


  1. Preheat oven to 350 degrees.

  2. Place tbsp. of olive oil on a baking sheet and set aside.

  3. On low to medium heat add a tbsp. of olive oil to sauce pan and let warm up; chop up the medium onion and garlic and add to the oil and sauté until the onion is translucent.

  4. Once the onion and garlic has cooled add to the bowl; add salt and spices to the bowl and mix.

  5. Add egg and mix then add the bread crumbs and mix. Form into balls and place on baking sheet.

  6. Place in the oven for 15-20 minutes. Let cool and serve.
